Do you long to be that domestic goddess you’ve dreamed of but you just don’t have time? Well here’s a quick and easy recipe that I know you’re going to be able to squeeze in. Hi! I’m Victoria Casebourne from The Keepsakes Company and I want to share with you a really quick and easy recipe that I came across that really has helped me with the food that my little boy can consumes because he doesn’t eat a lot, he’s really, really fussy. But these muffins are great because you can make them savory, sweet, added anything you want (whatever they eat). And if yours is like mine, he’s always got room for cake even if he’s got no room for anything else. So they’re really, really good! Here is how you do it. First of all, you have to grab these ingredients:
- 2 cups of self raising flour
- 1/2 cup of sugar
- 1 egg, beaten
- quarter cup of grape seed oil
- and 1 cup of milk
And then, whatever it is that you want to add! So you can add apple cinnamon (which I’ve done), chocolate chips, banana. You can do cheesy ones, bacon and cheese, mixed vegetables or whatever it is you think. Pop it all in a bowl and mix it until it all just combined. And then you can involve your little ones to help them dish it all up into the little cases. Oliver is having a great time here. You probably want to step in some point now because it does get very messy but it’s great fun and he loved it. Then pop it in the oven for 20 minutes and then you could also freeze them in batches for up to three months. You can make them and bring them out whenever you want. A healthy snack! Really, really quick and easy and really glad that I found it. So all you need to do is make sure you’ve got those ingredients in your cabinet and then whenever you decide that you want to whip something up in 10 minutes, you can mix all in a bowl, pop it in the oven for 10 minutes or 20 minutes and you’ve got some hand-baked muffins.
